For Q1:
well...lets see, this is just my preferance but it seems that victoria and hayate are both solely for damage and nothing else. I can see how you would be caught between the 2, but I think if its one of the 2, it should be victoria.
4 reasons why:
1. She's fire, she has the atk boost that all fire's get so you can get that extra atk that could help if she has a lot and you brooch her.
2. She's burstable, so that means you can get her to lvl and rb faster, much faster than auto training, trust me.
3. If you're going to feed them, hayate will need more food if you want her atk to match victoria's at the same level with the same stats. She's wind which means she gets a boost to speed, not atk.
4. Unlike hayate who has only atk moves...Victoria has fiery atk which can be a substitute atk boost if you have victoria on a non-fire character.

for hayate...
3 reasons:
1. This is purely my preferance, she has a way cooler rb look than victoria, I mean seriously...vic's rb clothes just look terrible...
2. She's wind, which means you have an advantage over earth enemies that niss can't take out.
3. Not a lot of new players know this but hayate can be considered a formidable pk pet. She has a skill that hits 2 targets, front and back and she's wind so that means you can use the wind item for pets that doubles her speed and if she has enough atk...well...say hello pk rank 1. (although clive is kinda the same...)

For Q2:
Kanako can be considered a great healer and finisher. She is capable of rb but just so you don't make a mistake...she's not burstable. If you pick hayate, you can train kanako with her and they can reach 100 together and rb together, kinda like pet rb buddies. My Juliana(Elin) and Alice(Niss) were just like that back when I trained them to 100. Kanako has a great single target skill after rb and it looks freakin awesome. I would definitly recommend kanako if you're looking for a healer.

I also want to add in one thing...
There is a rule that when you like something and pick it, you like just solely because its there. It is also because it was the "first" one.
I myself have always asked others about whether I should go with one pet or another, but I look at the advice and never truly take it in, and instead I choose based on the one I like best, or the "first" one. I thought about niss and fred for my fire killer FlameBrag once. But even after everyone told me to take fred, I took niss in the end and I was more than satisfied.
