Servers are made to try to reduce the number of characters the player can see/interact with. This reduces lag. If everyone play together in one server, this means there is only one machine processing informations/datas from thousands of players around the world!!! This will crash the machine and the game will lag a lot. Also if one server breaks down, not as many people will be affected, because other people can play on some other servers
