Umm... you CAN type the whole name.
If you'll click the "recipient" block and type the full name it will choose it from the list. You just need to type it fast.
That's exactly the same way how you choose items when adding compounds and recycles. I never scroll through the whole list, I just type the name and list becomes highlited on the item automatically.
Having a signature is like keeping a gremlin.
Just don't overfeed it, don't make it wishy-washy and you'll be a good responsible Signature Keeper :]
